Well, it’s only day three of Vegan Mofo 2012 and, as I expected, my atrociously busy month is already getting the better of me! I have a deliciously Autumnisinal (I’m not too busy to make up words, apparently!) recipe coming at you tomorrow, but for now, let us take this day to reminisce about the lazy, hazy days of summer. Days when salad was all you needed to sustain you until your next craft beer. Yes, salad days.
I didn’t really fall in love with salad until I gave up gluten (veggie blasphemy, I know). The word salad brought to mind iceberg lettuce, over-ripe tomatoes, oddly moist cubes of cheese and nasty bursts of green bell pepper diced too small for me to ever cull entirely. But this summer I fell in love with salad and I ain’t ever going to quit it again. Check out some of my pretty summertime feasts below:
